The training “Basic cook” is meant for people who want to retrain to become a cook. The training offers the possibility to get the diploma SVH (level 2) and a CAN (Culinaire Academie Nederland) certificate. There are many possibilities to combine this training with working in the kitchen of a Horeca establishment. Just check our Vacaturebank. Of course you can also follow the “Basic Cook “ training if you love cooking and want to know more about it, so you can cook for your friends and family.
The training starts with a conversation with your mentor to find out what you know and what you want to learn more. Together we decide how we can use your knowledge and abilities and how we can enlarge those. The training is connected with the National Quality Files. We use the SVH method. You can administrate your progress in a portfolio.
Theory and workbooks are included in the training, as is the on-line license. You will work with many different ingredients, and big variety of ways to prepare the food will be offered to you.
During the training we will pay attention to the following topics:
Working in the hospitality industry
You get to know different types of companies and learn the different functions within a company. You learn how a kitchen is organized and who works in a kitchen. You learn how to work cleanly and neatly and how to take care of your guests.
It is important to get acquainted with as many different ingredients as possible and to learn what you can do with these ingredients. We therefore provide various lessons about fish, game, mushrooms, herbs and spices, vegetables and many other products.
Of course we first pay attention to cleaning products, cutting techniques and blanching. We learn different types of dough and batters. You practice making mousse, bavarois, farce, stocks and various sauces. With these techniques you are able to compose and prepare simple menus for guests.
All this knowledge is used to receive guests at our academy so that you can practice how it works in a real restaurant.
After 10 months you can do the CAN (Culinary Academy Netherlands) test for the CAN diploma and the SVH exam (sector recognized) for cook. There are opportunities to retake the exam at your own expense if needed. SVH exam will be in Dutch. You are allowed to have a translator present.
You must have a sufficient command of the English language (speaking and reading skills). The exam level of the basic chef training course is comparable to MBO level 2, the training itself is more extensive and more subject-oriented than regular MBO courses. You can only register if you are no longer required to attend school. There are no exemptions from this training unless you have already completed the training as a kitchen assistant. These exemptions are then always in consultation with the teacher.
During the basic chef training course you go to school 1 day a week from 10 a.m. to about 9 p.m. On this day you will receive theory and instruction, but above all a lot of practice. In addition to the school day, we expect approximately 4 hours of self-study.
Materials you need
You are expected to purchase the basic materials for this cooking course. We expect all our students (also for their own safety) to wear chef’s clothes and chef’s shoes. You also own a basic knife set. After registration, we will send you a list with the necessary materials. Before the training starts, you can order the materials in our webshop. You need to have access to a laptop or computer at home, preferably with Microsoft 365 account.
You will be taught by Daniell van den Broek. During this chef training she will guide you during the 30 weeks and help you to prepare for the exam. She can also support you in your job search.
